Hokkaido Cake Baking session

2-hrs Hands-on Hokkaido cake Baking Session. Bought this deal from Groupon at $93 for 2 pax. 

Class is conducted by trainer from ITSI Baking Studio, at their Kreta Ayer facility. This facility is more for small group, or max of 12 pax & 6 of us already filled up half the class!

Recipe & method

Recipe:
Group A - 
3 Egg Yolk
30g Sugar
1 Pinch of Salt
30g Corn Oil
60g Full Cream Milk

Group B
70g Cake Flour

Group C
3 Egg White
1/4 tsp Cream of Tartar
40g Sugar

For Piping
Non-dairy Cream
Icing Sugar

Method:




1. Mix all Ingredients in Group A, whisk till no trace of oil floating on top of mixture




2. Mix all ingredients in Group C, whisk at high peak. Whisk till soft peak


3. Add Group B into Group A, fold till no trace of flour. Do not over-fold


4. Add about 20% of Group C into the mixture & fold in.  



5. Add the mixture to the remaining 80% of Group C, fold till color is even.



6. Once mixture is ready, pour into Hokkaido square cup, size of 5x5x5cm. If using muffin cup, please use non-wax cups


7. Bake at 180* for 20 mins

A snap before sending our creations into the oven!


Tadaa~~~ Pretty Hokkaido cakes!


8. While the cake is cooling, whisk the cream till lines are visible. 



9. Poke a hole in the middle of the cake, pipe in the cream till the cake 'bloats'. For nicer & fluffier looking cakes, pipe in more cream. 



10. Sift Icing Sugar on top of the cake


Viola~~ Hokkaido Cake is ready to be served!
